The Tajinito

My boss, nicknamed Tito introduced me to the seasoning Tajin last year. Since then he has been sharing different ways that him and his family like to eat Tajin. Two of those ways are on pineapple and carrots. When I discovered Burger Month was coming up I knew I wanted to make some kind of burger using Tajin and some of the flavors he has introduced me to. Being the Willy Wonka of BbQ Spice I of course had to make my own version of this amazing spice!

The burger is seasoned with my version of Tajin, which has been dubbed Smokey Tajin, Oaxaca cheese, a Pineapple & Carrot slaw seasoned with Tajin and drizzled with a homemade Chamoy creating a unique flavor explosion! No need to take my word for it though, here's the recipe for all of the components so you can make your own Tajinito.


Smokey Tajin

1 TBL & 1 tsp ancho chili powder

2 tsp chipotle chili powder

1 TBL Citrus salt

1 tsp citric acid

1 tsp sugar

Mix all the ingredients in a small bowl and set aside.


Carrot & Pineapple Slaw with Tajin

1 cup diced pineapple

1 (10 oz) package matchstick carrots

2 TBL oil

2 TBL lime juice

2 TBL agave

1 TBL pineapple juice

2 TBL chopped cilantro

2 TBL Tajin

Combine oil, lime juice, agave, pineapple juice and Tajin in a bowl and mix well.

In another bowl mix the pineapple, carrots and cilantro.

Pour the liquid over the carrot mixture and toss well. Cover and chill. For best results allow to marinate overnight.



3/4 cup water

3 dried ancho chilis

1 cup apricot jam (10-12oz)

1/2 cup lime juice (4-5 limes) and zest

3 TBL sugar

3/4 tsp Citrus salt

Add the water to a blender or food processor. Wearing gloves, pull off the stem of the peppers and shake out the seeds. Tear the peppers into smaller pieces and place in the blender with the apricot jam, lime juice, sugar and Citrus salt.

Blend or pulse on high until smooth. Store in a sealed container in the refrigerator until ready to use, up to 2 months.


Now let's get the rest of the ingredients and make a burger!

1 lb of ground beef

4 buns

Oaxaca cheese

Smokey Tajin

Carrot & Pineapple Slaw with Tajin


Form the ground beef into 4 patties or buy premade patties.

Season both sides with Smokey Tajin. Cook using preferred method.

Top with Oaxaca cheese first and melt, followed by the Carrot & Pineapple Slaw. Then drizzle some Chamoy over the slaw.
