As I just finished devouring my 4th Smokey Shrimp Street Taco, a recipe I developed today for the sole purpose to share on here (tmw)...it dawned on me that I should probably clarify something: I am a Stick Burner. For those of you that don’t know, a stick burner is a term for a Pitmaster who only uses charcoal & wood to fuel their pit. While my wife & I ate our tacos I tried to impress her by telling her how I “drizzled butter over the shrimp to get the coals to flare up & produce a char.” I realized not all home cooks who try to re-create my recipes are going to be able to do this. Honestly this is the first time I have ever grilled shrimp at home so I googled how to do it. The instructions were to ”set my grill to low”...ummm?
Hence why I thought it was important to point out everything I make, when referring to a grill or smoker, will be over live fire. I personally feel this imparts a different flavor than using a propane grill or even a pellet smoker.
I’m not saying my way is better, I’m just making everyone aware this is MY way so I don’t guarantee ALL recipes will turn out the same for you at home as they do for me. I will do my best to highlight these little touches I make when sharing a recipe.
