Cilantro Lime Chicken Tacos



These simple, yet incredibly flavorful tacos are sure to be your new Tuesday favorite!



Ingredients:

1 lb chicken breasts

preferred taco shells

Tostito Hint of Lime chips, crushed

1/4 tsp ancho chili powder


Marinade:

2 limes, juiced & zested

1/4 tsp Tajin

2 tsp Badia Citrus Salt

1/4 cup agave

1/3 cup oil

1/4 cup cilantro, chopped


Sauce:

1/4 cup mayo

1/4 tsp Tajin

1/4 tsp Badia Citrus Salt

1 lime juiced & zested

1 TBL agave

2 TBL cilantro, chopped




Start by mixing all of the ingredients for the marinade in a small bowl.

Pierce the chicken with a knife several times, then cover in marinade. Marinate for at least an hour but this can also be done the night or morning before cooking.

Next, make the sauce by combining all ingredients in a small bowl. Refrigerate until ready to use.


When you're ready to make some tacos, preheat your oven to 350. Bake the chicken for 45 minutes, until it reaches an internal temperature of 165 and is easy to shred. Shred the chicken.


To build the tacos start with some chicken and drizzle some of the sauce. I topped mine with some crushed Hint of Lime Tostitos tossed with some ancho chili powder for a little crunch.
