Chicken, Waffle & Egg Burrito with Maple Bacon Coffee Sauce


I will fully admit this was another "hail mary" recipe: I didn't have anything planned for dinner and didn't want to go to the store so I took some of my kid's waffles & chicken and threw this together. It is not at all some culinary masterpiece. It is however, easy & delicious. When I posted the pic, people seemed to like it so I decided to share. You're welcome.


I will most likely re-visit this recipe one day and make a better chicken & waffle but the sauces were on point!



First I made a Maple Hot Sauce with butter, maple syrup, chipotle tabasco and brown sugar.













While the hot sauce was simmering I scrambled some eggs seasoned with my Bourbon Barrel Coffee Rub.













Once the eggs are done, it's time to start assembling the burritos.


Mixed cheese, eggs, waffle, chicken & Maple Hot Sauce.

I used a "foldable" burrito shell because it was all I had. I strongly recommend NOT using these. They're great for enchiladas, not so much for burritos.


Last step is making the Coffee Cream Sauce. It's just coffee, cornstarch and coffee creamer. I used a Maple Bacon Coffee and Italian Sweet Cream coffee creamer.


Feel free to play around with some of the ingredients to make it your own.


This can be made for breakfast, brunch or dinner. Enjoy!




Chicken, Waffle & Egg Burrito with Maple Bacon Coffee Cream


Yields: 2 burritos

2 eggs, scrambled

1 waffle, diced

4 pieces of fried chicken, diced

1/2 cup of cheese

2 burrito shells


Maple Hot Sauce

1 TBL butter

1 TBL maple syrup

1 TBL hot sauce

1 1/2 tsp brown sugar

S & P to taste


In a small saucepan, melt butter. Stir in the syrup, hot sauce, brown sugar and S & P. Bring to just below a boil; cook and stir for 2 minutes or until thickened.


Coffee Creamer Sauce

3/4 cup brewed coffee

2 tsp cornstarch

3/4 cup coffee creamer


Heat brewed coffee in a saucepan over medium heat.

In a small bowl mix cornstarch with 3 TBL warm coffee. Add it back to the saucepan, whisk constantly until it thickens.

Add in the creamer. Bring to a boil over medium heat. Reduce the temperature and stir constantly until it reaches your desired thickness.


To Assemble:


Layer the burritos with cheese, scrambled eggs, waffle, chicken & Maple Hot sauce.

Sear the burrito on both sides over medium heat to melt the cheese.

Top with the Coffee Creamer sauce.

Devour
